Karaage (唐揚げ) is one of a Japanese cooking technique in which various foods are deep fried in oil.
This is "Tori-no-Karaage (鶏の唐揚げ, Chicken karaage)". Looks like a typical fried chicken, but small pieces of Chicken are marinated in a mix of soy sauce, ginger and Sake, then lightly coated with a seasoned both wheat flour and Katakuriko (potato starch), and fried in a light oil.
Served with sliced lemmon and mayonnaise is good combination. Good for lunch or dinner, bento, and a snack for beer. Yum Yum

Ika furai Okaka Bento (bento with fried squid and dried bonito shavings).

Convenience stores (often shortened to Konbini) such as Seven Eleven, Lawson, and FamilyMart, are extremely popular in Japan. Especially Konibini bento of many varieties, is one of a main selling point for each stores. Each companies develop both standard and seasonal bento to attract customers.

Ika furai Okaka Bento (bento with fried squid and dried bonito shavings) was a seasonal bento menu of Seven Eleven. It was a hit product on 1982. Seven Eleven revives this bento sometimes.
There are many fans of this bento in Japan including me. I miss this bento and made it in the Netherlands.

This is the specification of Ika-hurai Okaka Bento.
1. Fully place and spread steamed rice in the bento box.
2. Sprinkle Okaka on the rice. Okaka is the dried bonito shavings that is tossed with soy sauce. This is popular as a stuffing for rice balls or bento topping.
3. Place following items on the rice.
- fried squid coated with bread crumbs. deeply dipped in Japanese brown source.
- vegetable kakiage (deep-fried onion and carrot). deeply dipped in Tempra souce.
- scrambled eggs
- beni-shoga (red pickled ginger)

Don't use good bento box to make Konbini bento. It's better to use "Chinese take-away box" to create an atmosphere of Konbini bento.
Enjoy Japanese traditional junk bento!

Fukagawa-don (Japanese rice bowl with clams and miso broth)

Fukagawa-Don is one of a traditional Donburi (rice bowl menu) in Japan.
Lightly cook clams and spring onions with miso broth, and place on the steamed rice.
It is said that Fukagawa-don appeared next toward the end of the Edo period.

Basically Asari clam is one of a traditional ingredient of Fukagawa-don in Japan.
On this time I used mussel instead because mussel is cheaper than clams in the Netherlands.

Japanese green tea cake (抹茶ケーキ, Macha cake) is popular like green tea icecream in Japan.
Japanese green tea powder (Macha) is needed to make this cake.

After that, you can take same procedure of typical cakes.
Serve with whip cream and anko (Azuki red bean paste).

The sliced roast pork are placed on the top of the rice, place fried egg on it, and the roast pork gravy is poured over as a finishing touch.
It was originally a meal provided for cooks within the kitchen of the Chinese restaurant in Imabari.

Zoni (雑煮)

Zoni (雑煮) is a Japanese soup containing mochi rice cakes. The dish is associated with the Japanese New Year and its tradition of ceremonial foods.

Mochi (餅) is a Japanese rice cake made of glutinous rice pounded into paste and molded into the square or round shape.

The preparation of Zoni varies both by household and region. Zoni has many regional variations in Japan. My Zoni is Kanto (east Japan) style because I'm from Tokyo. In the Kanto region zoni consists of a soup which is flavoured with a stock made from dried bonito and/or kombu, and soy sauce.
Common additions to the soup include chicken or fish, vegetables such as spinach, kamaboko (Japanese fish paste), carrot and some decoration sprinkles such as Fu (麩, Japanese wheat gluten).

15.2.13

Dango (団子)

Dango (団子) is a Japanese sweet (Wagashi, 和菓子) made from mochiko (rice flour), related to mochi. Or Shiratamako (白玉粉) or Joushinko (上新粉). Three to four dango are often served on a skewer.
There are many different varieties of dango. The photo is Kinako dango I made. Kinako (黄粉 or きなこ) is a toasted soy flour that often used for Japanese sweets. Dango is good combination with drinking Japanese green tea.
A common Japanese proverb “Hana yori dango” (花より団子, literally, “dumplings rather than flowers”) refers to a preference for practical things rather than aesthetics. The title of manga/anime “Hana yori dango” (花より 男子, English title: Boys Over Flowers)" is referred from this Japanese proverb.

To make Kinako dango:
Mix together the Shiratamako and the water and until it forms a soft dough.
Divide the dough into small pieces.
Make each piece into a little ball(dango).
Prepare boiling water in a pan.
Add small balls in a boiling water until floating.
Sting boiled Dango balls on skewers.
Cover Dango with Kinako and sugar.
