Chan chan yaki (baked salmon and vegetables Northern Japanese style)

Chan chan yaki is a popular regional food of Hokkaido, Japan's northern island.
Mainly use salmon and cook with various kind of vegetables.
Bake on a hot plate or flying pan.
Seasoning with miso-based sauce when salmon and vegetables were ready.
The special sauce contains miso, mirin, soya sauce, and a little bit suger.
Put some butter on the top in the end.
This meal is also good for camping.
You can cook it if you want to try new kind of BBQ.

Pork Tamago (pork luncheon meat with eggs)


In Okinawa, Spam (can of luncheon meat) is called "Pork". That was brought by the American presence after WW2. Okinawan people practically arrange this economy can-meat by their style.
Pork tamago (ポーク卵, pork egg) is the dish using pork luncheon meat and eggs. It is one of a popular set menu of cheap restaurants in Okinawa.

To make Pork Tamago is extremely easy. Bake sliced luncheon meats. Make fried eggs or omelets. Place them on a plate with sliced cabbage and some tomato ketchup. Serve with steamed rice and miso soup.

Tōfu chanpuru (stir-fried tofu Okinawa style)


Chanpuru (チャンプルー) is a form of popular Okinawa stir-fried dish, generally containing vegetables, tofu, and some kind of meat or fish. Luncheon meat (such as Spam or Danish Tulip), egg, bean spuraut and goya (bitter melon) are some other common ingredients. Spam is not typically used in mainland Japan, but it's more common in Okinawa due primarily to the historical influence of its introduction by U.S. Forces. (http://en.wikipedia.org/wiki/Chanpuru)

Tōfu chanpuru is tofu stir-fried with vegetables and some kind of meat like Spam, sliced pork, or canned tuna. Unlike tofu from mainland Japan, Okinawan tofu is firm and does not fall apart when stir-fried. Therefore this is good to use tofu from Albert Heijn or regular super markets for making Tofu champuru.

To make Tofu chanpuru in the Netherlands, I use

- Euro shopper luncheon meat (from AH)
- AH Tofu
- Cabbage
- Bean sprout
- Carrot
- Onion
- Egg
- Shimaya Dashi No Moto (Japanese soup stock with fish flavoured)
- Salt and pepper


It's enough to use Euro shopper luncheon meat for Okinawan dishes. AH tofu is good to make Chanpuru too.

1. Slice luncheon meat. Cut vegetables.
2. Cut Tofu into cube; first lightly bake in a pan.
3. Transfer baked tofu to a dish at the moment.
4. Stir-fry luncheon meat and vegetables in a pan.
5. Add prepared tofu in a frying pan.
6. Add egg, and stir-fry together.
7. Seasoning with salt, pepper and Shimaya dashi.
8. Place on the plate. Sprinkle Katsuobushi (bonito flake) if you like.

Onigiri Okinawa style (Japanese rice ball by Okinawa style)


This is called Pork Musubi (ポークむすび, the rice ball with Spam and omelette). It is one of a popular Okinawan food. "Onigiri, おにぎり" or "Omusubi, おむすび",  is a Japanese food made from white rice formed into triangular or oval shapes and often wrapped in nori (seaweed). But Okinawa style is an unique that is using with Spam and egg.

Okinawa Prefecture (沖縄県: Okinawa-ken) is a prefecture located in southern Japan. It consists of hundreds of the Ryukyu Islands in a chain over 1,000 kilo meters long, which extends southwest from Kyūshū to Taiwan. Long time ago, Okinawa was an independent nation, and was not part of Japan. Thus they have their own cultures that are a bit different from Japanese cultures.

Basically you don't need to add seasonings like salt or soy sauce. But you can use ketchup or mayonnaise for dipping if you want.

Japanese rice seasoned with white asparagus


Dutch people says, "We shouldn't throw away the hot water that is after boiling white asparagus."
I used this water of white asparagus flavored to cook Japanese rice.
It's succeeded. Lekker! Yum Yum.
This brilliant white asparagus flavor makes Japanese rise taste really good.
I used a little bit salt to advantage the flavor of white asparagus.

White asparagus dressed with vinegar and miso


This is the best time of the year for white asparagus. We can use this brilliant vegetable for Japanese dish.

A Japanese cooking method involving dressing food with vinegared miso called sumiso-ae (酢味噌和え) or nuta (ぬた).
Miso is the base of miso soup. In Japan not only soup but we also use miso for seasoning.

”White asparagus no sumiso-ae (ホワイトアスパラガスの酢味噌和え. White asparagus dressed with vinegar and miso)” is easy and gorgeous Japanese dish.

To make "sumiso (vinegar and miso)" is

- Miso: 4 tbsp
- White wine vinegar of sushi vinegar: 2 to 3 tbsp (depends a taste you like)
- Suger: 1 to 2 tbsp (depends a taste you like)

Just mix together all of them. Finished making basic sauce.

Pour this sumiso on boiled white asparagus. Or dressing white asparagus with sumiso.
Sprinkle some white sesame on the top.

This is Hello Kitty 2D type version.

Face:goat cheese
Eyes and whiskers: Konbu seaweed
Nose: egg
Rice: fried rice of curry flavor
Decoration:  carrot
Others:  snacks from super market, cherry tomato, broccoli
Nori-omelet, lettuce, sausage

You can use daily ingredients from supermarkets in your neighborhood

Bowl of salmon, cabbage and rice with garlic soy sauce


"Donburi (丼)", or "don" is a Japanese "rice bowl dish" consisting of fish, meat, vegetables or other ingredients and served over rice. We have many kind of don and new don are generated day by day in Japan.
Today I introduce Sake to Kyabetsu no Ninniku Shoyu Don (鮭とキャベツのにんにく醤油丼, Bowl of salmon, cabbage and rice with garlic soy sauce). This dish became the talk of the cooking site in Japan.

1.Bake salmon and cabbage by sesame oil in a frying pan.
2.Place them on steamed rice.
3.Heat frying pan again, add sesame oil and sliced garlic, bake 2 to 4 minutes.
4.Pour this garlic sesame oil and Japanese soy sauce on a rice bowl.
Mayonnaise is an option if you like,

Okonomiyaki (Japanese pancake, or Japanese pizza)


Okonomiyaki (お好み焼き) is a Japanese savoury pancake. There are a variety of ingredients and toppings for Okonomiyaki. You can make Okonomiyaki if you can make a pancake. Brief recipe is as follows,

batter
- all purpose flour
- Konbu or Shimaya dashi soup stock
- eggs
- finely chopped cabbage,

sliced pork

toppings:
- ao-nori (dried seaweed powder)
- Japanese brown sauce
- mayonnaise
- katsuobushi (dried bonito flakes)
- beni-shoga (pickled red ginger)

Mix batter with finely chopped cabbage.
Heat a frying pan and add some oils in.
Pour the batter into the frying pan and place a slices of meat on it.
Bake for about 6 to 10 minutes.
Flip the okonomiyaki and cook until cooked through.
Place okonomiyaki on the plate and spread sauce on the top.
Sprinkle Aonori, katsuobushi and beni-shoga on it.
Serve with mayonnaise.

Megurine Luka is the third vocaloid from Hatune Miku.
I made a Kyaraben of her.

hair: ham
face: cheese
blue part: white of egg, food colour
dress: konbu seaweed
decorations: yolk (yellow part of egg)
others: Nori seaweed

To be honest, using food color is not so good solution but it was hard to find "blue" of Luka.
Please remember. We'd better to use natural ingredients as much as possible.

I got most ingredients from Albert Heijn, a typical Dutch super market.
Bento box is from Blokker, a typical Dutch shop.
