White asparagus dressed with vinegar and miso


This is the best time of the year for white asparagus. We can use this brilliant vegetable for Japanese dish.

A Japanese cooking method involving dressing food with vinegared miso called sumiso-ae (酢味噌和え) or nuta (ぬた).
Miso is the base of miso soup. In Japan not only soup but we also use miso for seasoning.

”White asparagus no sumiso-ae (ホワイトアスパラガスの酢味噌和え. White asparagus dressed with vinegar and miso)” is easy and gorgeous Japanese dish.

To make "sumiso (vinegar and miso)" is

- Miso: 4 tbsp
- White wine vinegar of sushi vinegar: 2 to 3 tbsp (depends a taste you like)
- Suger: 1 to 2 tbsp (depends a taste you like)

Just mix together all of them. Finished making basic sauce.

Pour this sumiso on boiled white asparagus. Or dressing white asparagus with sumiso.
Sprinkle some white sesame on the top.
