It is made from thin strips of ginger pickled in Umezu, the pickling solution used to make umeboshi. Commercial Beni-Shoga often derives its hue from artificial coloring and very chemical. Because those are exported to Europe taking more than 3 month by ship. Therefore I make Beni-shoga by myself.
